I want to make a brisket, but how do I keep the coals in my tiny grill hot for six hours?
I basically said it all in my question. I want to make a great bbq brisket and it takes six hours of slow cooking. I have no idea how to keep the coals hot for that long.
It would be a pain to remove everything and put more coals...
Okay all these people thata say brisket os not good for dry cooking, or on the grill etc... are so WRONG.
A good brisket will have Tons of fat, and a good fat cap on top. Do NOT trim that off until after you have cooked it. That is key to having a moist and flavorful brisket.

Keep Cancer Off The BBQ Grill
Some people may be reconsidering plans to grill hot dogs and steak based on a new report supporting the link between red and processed meats, and increased colorectal cancer risk. But, experts at The University of Texas MD Anderson Cancer Center say that small changes to what - and how - you grill can keep cancer off the menu.
"The good news is that you can do something to reduce your risk of colorectal cancer," says Sally Scroggs, health education manager at MD Anderson's Cancer Prevention Center. "And, making just a few cooking adjustments when grilling can play a part in prevention."
Scroggs recommends these tips for a healthier barbecue.
1. Avoid processed meats.
Skip processed meats like bacon, ham, pastrami, salami, sausage, hot dogs and pepperoni.
Cancer-causing substances form when these meats are preserved, says the American Institute for Cancer Research.
